Well! It looks like the new strategy is working. Who'd have thunk that eating more calories would drop more weight?
The ex sent me a half gallon of MCT oil for Christmas, so I'm back to drinking 'bulletproof coffee' in the mornings. It's a quick way to add calories in a day!
I tried a recipe I found on Pinterest yesterday...egg roll in a bowl. It's the filling for a traditional egg roll without the wrapper. It was GOOD! I have a meat grinder, so I ground up a pork steak for it, and marinated it in fish sauce, garlic and soy sauce. A Thai friend clued me in on using fish sauce. It smells like sweaty feet, but it's what makes Chinese and Thai food taste authentic. Fortunately, it doesn't taste anything like it smells! I used Napa cabbage instead of regular green cabbage, but I think next time, I'll use regular. I think the texture will be better. I also cut the amount of hoisin sauce, because that stuff is carby! But it does add a really nice flavor.

Thanks everyone! I appreciate the support! I'm back in deep ketosis, and not struggling at all with the plan. No keto flu, probably because, although I strayed some, I didn't go off the deep end with sugar, and continued IF throughout. I am noticing less ankle swelling, though, and a general improvement in how I feel. Aches and pains are minimizing, and sleep is definitely better.

Nice loss there, MsKes! And thanks for the suggestion. I've been experimenting with two new spices: Zatar and Aleppo, both middle Eastern. Zatar is a herb and spice blend that features thyme and sumac, and Aleppo is a sort of fruity chili pepper. The mix well or stand alone. Tonight I used them as a rub on roasted pork chops......Yum!

@Erika, those both sound great! I've been playing with some exotic spice mixes, too. I've discovered that the source of my distaste for Thai food is not, as previously suspected, lemon grass, but kafir lime leaves. A Thai friend gave me some fresh lime leaves, and I knew as soon as I smelled them that they were the problem I've had with Thai food for years. Tom ka gai is next up on the menu!

i get freaked out if i go over on calorie count! Should I worry so much???

@Paularichardson, it depends on what plan you're following. With LCHF, you become fat adapted, so any deficit of ingested calories is made up for with body fat.
