I had lunch yesterday at the International Supermarket. They have a restaurant area with an amazing buffet of freshly made Latin American food. All their soups, sauces and dishes are made in-store from fresh ingredients from the store. Every day, it's something different, but always delicious.
I have NO idea how to log what I ate, though! LOL There was chicken in a tomato-chile broth, pork rib ends in a tomatillo sauce, Mondongo (vegetable tripe soup), and a variety of fresh, sliced veggies and salads. If you've never tried cucumber slices with lime juice and Valentina hot sauce, I highly recommend it! Beats Doritos by a mile! I ate until I was stuffed, and left with my mouth on fire.
The find of the day was 8 oz boxes of Jamaican creamed coconut for $1.29. It's the same thing as coconut butter, which I've been ordering off the internet for $14.99 for a 14 oz jar!

What are you using the coconut butter for? I'm thinking of that 83 year old body builder on Oprah who made her own and used it all over her skin. She had no wrinkles.

Once you get to the stage where you can bump your carb levels back up, you should try making "jamaican rice and peas creamed coconut" AMAZING. This was a staple part of my diet growing up.

@Lady, isn't she amazing?? Mostly, I just eat it out of the jar, like a nut butter. It's also a nice change in BPC. You can use it to thicken soups and sauces, too. It's got lots of fiber and antioxidants. I imagine it would be a great moisturizer for skin and hair, but because of the fiber in it, I think I'd use coconut oil instead.

@Ches, love me some oxtail! I almost picked up some oxtail seasoning yesterday. Goat is one of my favorite meats, too.

Aside from all the health benefits of coconut oil it also does wonders for skin and hair. Give yourself a spa treatment sometime of it in your hair. let it sit, then you have to wash it about three times. My hair never looked that good before!

@Erika, my hair is so soft already, if I gave it a coconut oil treatment, I'd never be able to do anything with it! I'm going to start using it on my skin, though. As I shrink, there are all kinds of new wrinkles all over me! LOL I'm starting to look like someone forgot to iron my birthday suit. :P

I love creamed coconut too. I put it in vegetable curries and soups. The International Supermarket sounds like a great place to shop :)

Hey I need a couple of bars of that Kes!! And @Ches, I love me some curried goat, brown stewed chicken, peas n rice and jerked pork....dang, miss having Jamaican Jerk Kitchens right around the corner!!!!!!
