Hi Doobs, recipe for the pancakes.....

Lulu Lowcarb's - Crepes
A very low carb small crepe or UK "pan cake"
Ingredients
• These quantities make 8 servings.
• 4 large eggs
• 1/4 cup serving the groovy food company’s organic coconut flower
• 2 tbsps butter
• 3 tbsps coconut oil
• 1/4 tsp salt
• 1/4 tsp baking powder
Directions
1. Mix all ingredients EXCEPT the butter into a mixing bowl and thoroughly mix.
2. Heat a small frying pan, (Single egg size) on the hob, greasing the pan with a small amount of the butter. Pour enough of the mix into thinly cover the bottom of the pan.
3. Cook each side for approximately 2 minutes until browned and then serve adding your favourite crepe accompaniment. (My favourite is Strawberries and berries with cream). Per serving = 117 calories and only 2 grams of carbs.

Hi W, That looks really scrummy I must put this in my recipe folder now, I meant to put that chicken base pizza recipe in as well but I forgot to and now I can't find it anywhere, can anyone remember who posted it?.....M x

Wonder if I could sub almond flour for the coconut flour?

Probably, Arabella but from memory coconut flour absorbs more liquid than almond so you'd have to adjust the amount of flour (or liquid). Probably easier to adjust the flour as you can always add more and save excess batter in the fridge for another day

Well, I tried today, Windle, but mine came out nothing like Lulu's. Not sure where I went wrong, unless it was because I used a different make of coconut flour. My mixture went really thick in about 30 seconds and I had to spoon it into the pan and pat it out to get it a similar shape. They were more like Scottish pancakes! Tasted nice though. Perhaps you could ask Lulu if she melts the coconut oil before adding it? That might also be where I went wrong.

Just found a similar recipe on the web, but that one adds 1/4 cup of milk. Did Lulu put milk in hers, Windle?
