Well Monday came and it had to happen. I had eaten the last of my food stash lovingly prepared by Lulu Lowcarb’s. With a sharp intake of breath I told myself, “You’re on your own now old chap. Better start resurrecting your student day stuff,” hmmmm well that would have been ok if it wasn’t so full of carbs.

Breakfast - Porridge was always quick and simple, but was more or less my whole day’s carbohydrate allowance in one meal. It went down a treat and only 4 minutes to prep cook and tuck in. The problem with carb rich meals is I became hungry after an hour or so. I played my ace in the hole and knocked up my version of a bullet proof coffee. Oh yes that hit the spot and saw me through to about 14:00hrs.

Lunch – I use to really like a Mediterranean dish of roasted bell peppers stuffed with rice, feta cheese, onion and anchovies. Only problem, was rice was pure carbs and I had no anchovies, so I improvised by making my own rice from cauliflower. Ten minutes with a cheese grater and I had enough cauliflower rice to make three servings. I will list this recipe tomorrow when I get some time it tasted great, I didn’t miss the real rice thing and after baking it for 25 minutes there was no real taste of cauliflower and texture was about the same as rice. I made one meal for lunch and had another two meals left over for another day. They went into the fridge to be nuked/microwaved another day.

Dinner – A simple concoction of two grilled Angus 1/4lb beef patties on a bed of lettuce and tomato with a squirt of salad cream, (Well I had no mayonnaise). I turned the beef patties into a sort of burger by sandwiching them between two slices of LivLife bread. It did it for me I had eaten well and not become hungry, so celebrated at the end of the day with a couple of whiskies.

You know how to feed yourself well, Windle, and you were very inventive there with the cauliflower. I wouldn't have thought to make stuffed peppers with it. Well done!

Salad cream is a guilty secret of mine, have loved it since a child and is far superior to cheap mayonnaise. You have done very well without LL and proved to yourself that you can so you can go ahead with confidence. Congrats!
