I decided to do a trial run in the mini quiche yesterday, since I was unsure of the proportions using quail eggs. It came out really great! The eggs are a little hard to work with, since the shells are very thin and brittle, but the membrane inside is really strong. It's hard to open them without shattering the shell. The membrane around the yolk is also very tough. I'm glad I did the trial run. Since YouTube has a tutorial on how to do ANYthing..I checked. Sure enough, there's a way to open quail eggs with a serrated knife. LOL! I'll try to post some pictures of the Little quiche. I had very little appetite yesterday, so that 3" diameter quiche was my one meal for the day. I did, however, drink nearly a gallon of unsweetened iced tea.
