Happy Thanksgiving, FS Buddies! Today I have been reflecting on all the things for which I'm thankful, and the list is long.
I decided to go ahead and make a mini-feast for myself. Roasted turkey thighs, baked sweet potato, gravy. and the one dish which, for me, it simply isn't Thanksgiving without, green bean casserole. I ate to satiety, and I have to say, it's nice to get up from a T-day dinner and not feel like I'm going to explode! I didn't even miss the mashed potatoes, missed the cornbread stuffing a little (the gravy would have been REALLY good on it!), and the other fixings, not at all. I had one slice of jellied cranberry sauce, which ran the carbs up double what the rest of the meal had, but turkey and cranberry sauce are just a match made in heaven! Still kept below 50g net for the day, and it's my one meal, so I have no regrets. :D
I never realized what good source of fiber sweet potato is, until I entered it in my food diary. I have been a wee bit concerned over how little fiber I get normally, so I may be adding them in periodically. Besides, they're SO yummy!

That sounds so good Kes. We don't make cornbread stuffing, but for me it's more important than the mashed potatoes so missing it was probably a good thing. I loved baked sweet potatoes, but have always hated them candied. The pumpkin pie would have been the real problem. Maybe this cold is a good thing after all.

We have our big turkey dinner on Christmas Day in the UK but my son's making it this year since I will be out of action for a few weeks. As I don't eat meat, I just eat everything expect the turkey - lol! Sounds like you had a good dinner. Glad you enjoyed it 🙂

What a warm and welcoming post Kes. I almost felt u was there with you. I'm delighted you had a lovely meal and you had everything there you enjoyed. Sounds like a very happy Thanksgiving.
