Am actually up .7 lb but was down .7 lb yesterday. The up is due to pigging out on the delicious chili I made yesterday. The day before it was down because of sauerkraut for dinner. I had leftover vegetarian Italian sausage with sauerkraut and heard Debbie Cousins talking about putting in apple and onions so sauteed and caramelized onions for both dinners. It wasn't a green apple so was surprised how sweet it made the sauerkraut. I wasn't crazy about those Italian sausages but had bought them and froze them when my husband was in kidney failure 4 months ago. He is so much better, but I probably won't buy those particular sausages again. We are used to the old fashioned ones since he is Italian. I'll watch my weight closer the next couple of days so if I attend to it right away maybe it won't stay on. Well, that's 2 days I've followed Debbie's meals. Wonder what she's cooking next?

I'm tearing a couple of kitchen cupboard contents apart to reorganize them. I needed to get some of the older cans from the back on a couple of things and put all the sauces (like bar-b-que) together in one. My kitchen is small for a two-story house so I have some things stashed away in/under the built in banquette seating benches that my husband built. Those were actually emergency supply but the cans are getting old so need to rotate the new things into there. There's more canned tuna than anything else on the short side, along with a couple of 5-gallon containers that will stay there sealed. I need to think about how I can be using the tuna. Personally, I like tuna salad with lettuce, tomato, and mayonnaise, but my husband won't eat that. He will eat tuna with hard-boiled eggs and mayonnaise in a sandwich but doesn't eat sandwiches unless he is out somewhere or traveling. Years ago I would make creamed tuna on toast then upgraded for him to rice. I wonder if he would put up with that once in a while? He is very picky. Isn't it dangerous to be eating tuna more than once a week? Tuna is great for emergency supply but I just put about 30 fresh cans of sardines down there. I dare not buy any fresh cans of tuna, since I have too many old ones.

What I made yesterday (and had to go get ingredients to make another batch of today!) was the Chick-fil-A coleslaw recipe! When they stopped serving it on their menu, they posted the recipe online, and it is delicious! Yesterday, I only made a half of a recipe, but I sent one serving to my husband's mother, we each had one serving yesterday, and there was only one serving (which I just ate) left for today. Also going to try to make "baked potatoes" in the Instant Pot today. People say they are delicious done in there. Better go and have my grand daughter help fix them. The little guy helped me with the coleslaw.

I don't think it's bad to eat tuna a few times a week. I guess there's some concern over mercury but I wouldn't think it's an issue if you don't eat it daily.
