Fermenting carrots with ginger and radish today. Does it look a bit spooky?

It is like pickles but carrots... I let them sit in salt brine in this jar for some weeks maybe. It is my first time trying mainly carrots. I have fermented muxed veggies and pickles earlier

Oh pickled carrots 🥕 👍. We sell them at the store I didn't care for the prepared ones. But they tasted weird and didn't have a brine so I don't think they were a good example of the dish. I would like to try them again homemade I think I would like them if I had a good product as I like pickled vegetables typically and like carrots 😋. Let me know how they turn out.

Actually i think I have had pickled carrots with the cauliflower mixes. I think ginger would be good with it.

Since I will be low carb for a bit I am working on making more ferments. Not only good for gut health but probably lower in carb as the sugars in the veggies get consumed by the fermenting bacteria.
