For the filling I fried some onion in olive oil and then added baby marrow, mushrooms and red pepper. Seasoned with Cape Herb & Spice Roast Veggies. And then there’s some smooth fat free cottage cheese on the other side.
The omelette is just two whisked eggs. I used the same pan for the omelette. The pan was still very hot from the veggies so I kept the stove off and just covered the pan with a lid for a few minutes :)
