Woke at 219.2, down 3.0 from yesterday as the water loss continues despite a huge chicken fajita dinner last night. Had a protein coffee in the morning and then tried to do a sandwich at lunch with 90 second microwave bread, Swiss cheese, and turkey. But used coconut flour instead of almond flour and it came out more like a hard tack biscuit (something the early American settlers ate). Will not do that again! There wasn't enough cream cheese in the world to moisten that up! Pork roast and cabbage for dinner. UPDATE: Weighed 217.6 before dinner. Huge day of eating. Will eat less this week at work, but will be interesting to see how the weight goes without artificial means to lose the water.

At least you discovered coconut flour isn't a good substitute. Your dinner sounds delicious.

When using coconut flour, you need to add more eggs and let it soak up the extra moisture for about 5 minutes before continuing. Also, adding some konjac flour (glucomannan) helps soften it up. It's a learning experience baking with coconut flour.
