I've been wanting to try this out. I call it 'Zucchetti Bolognese'. The Bolognese sauce is standard, tinned tomatoes, onion, red pepper, tomatoe puree, garlic, oregano and basil with Quorn Mince. Beef stock cube (optional). Sprinkle of Parmesan. Courgette (Zucchini) cut with a julienne slicer in place of pasta. 120 calories per serving. 15 grams of protein. Serves 4. Very tasty. Going to try it with julienne carrot mixed in with the courgette next time.
(Slicer purchased for €1 from Wish.Com. Not trying to advertise or endorse but it is a great kitchen implement to have for lots of different uses and for less than $2 including shipping it is well worth it although you'll have to wait a few weeks to get it.
