Pork rind crusted chicken, baked. Broccoli with a sour cream and cheese sauce. I used Melinda’s Mango Habanero pepper sauce 0NC as chicken dip, kind of reminded me of a sweet and sour/spicy dip. My kid’s favorite meal lately!! 👍🤩

Thanks, the chicken was so easy. Much healthier than how I used to make a cornstarch and egg wash and fry them... then slather them in a homemade sweet and sour sauce that was basically boil sugar, soy sauce, vinegar and ketchup 🙈 it’s crazy to compare my WOE to my past. I used to never think of sugar amounts or carbs.

@judyrose thank you so much! 😁 we are all feeling better but the sniffles and cough lingers. I have never eaten pork rinds before, so I was nervous but it makes a nice crunchy crust and the chicken was still moist and tender!!
