Make a white sauce and take it off the heat, stir in cheese to melt. Add nutmeg and cayenne, salt and pepper. Leave to cool. Separate your eggs whisk your whites till they are really stiff. Add your yolks to your cool sauce. Take 2 tablespoons of the whisked whites and stir into the sauce and then take the rest of the whites and this time gently fold it into the sauce with a metal spoon. Pre-heat your oven to 190°c. Butter your soufflé dish really well, pour in your mix gently and pop in the oven reducing the heat immediately to about 170-175° (this is all for a fan oven, slightly higher for a normal one)
Cool for about 30 mins. Don’t open the door of the oven till at least 25 mins
That’s a 3 egg soufflé with 3 oz of cheese and the white sauce is made with 1oz of flour and 1oz of butter …and of course enough milk to make it …not sure how much I used. Serves 2 for supper, 4 for a light lunch and 3 for a decent lunch

Thanks piggy - it never fails either. I think it’s based on a Delia recipe. I found it didn’t collapse in the way to the table either but you need to be quick to get it there.
