It was 2 thick bone in pork chops put in an oven proof dish. Then stone the plums - we had tiny baby plums from the garden but shop bought ones cut into into segments. I think I used about 8 oz or so in this one but it probably could have done with a few more.
In a bowl mix juice of galf an orange, 1/2 a tablespoon of white wine vinegars, ginger (I used about a level teaspoon of freshly grated but ground will do - about 1/2 a teaspoon probably of dried) 1/2 a teaspoon of Peri Peri seasoning, about 1/4 teaspoon of dried ground cinnamon or half a stick, a star anise and salt and pepper. I used honeycomb because we have bees but maybe 2.5 tbsp of runny honey and 2 finely chopped abd crushed garlic cloves. Pour over the chops and bang it in the oven at about 190° (bit less for a fan oven) for about 40 mins. Keep an eye on it…it might need a bit less or a bit more depending on how thick the chops are and how many plums you have etc.
