Find myself wishing that Food Network had a vegetarian show. So many vegetables, so little time, and I'm running out of creative ideas. Today, I made potato pancakes with zucchini and some kind of yellow squash instead of potatoes.

Your potato pancakes sound yummy! I'll send you a link to a vegetarian recipe I just tried. It's very good, and you can adapt it to your taste.

there's a green channel that sometimes shows vegetarian...but I know what you mean
