I tried making a keto chocolate cake last night using my mother’s county fair winning recipe! Except I used almond and coconut flour, and coconut oil. The coconut flour got me again! Tastes great but weird consistency. It will be good mashed up with cream!

I think coconut flower is very dry so when you use it you will need more moisture than what the recipe calls for. But as we know baking is a science and it may take many tries to adapt a recipe like that. I like a chocolate muffin that I make in a mug in the microwave in a couple of minutes

Bill, have you ever looked up Carolyn Ketchum of All Day I Dream about Food (blog)? She has several Keto cookbooks out and her baked goods are really good! The Ding Dong cake is all chocolate decadence!!
