@liv001 When I did them the first time, I over cooked them and they dried out. :( My advice... just keep checking they are still moist rather than just letting them go for the 2 hours.

Basically, braise like a pot roast: Brown first, braise in broth with spices, onion. red wine added to your tastes. There will be lots of fat rendered during cooking.

yes, it is very much like a potroast. It also reminds me of 'fatty brisket" the flavor and texture.
