Carb free Dinner - Stuffed Aubergine with minced beef. So I made my favourite minced meat, but with fresh tomatoes instead of the chopped tomatoes. I carved out a third of an aubergine and filled it with the sauce before a sprinkle of cheese atop. Yum.
