Made this yummy dish tonight. It's a low-carb nod to a Rueben Sandwich. I couldn't find any nitrate-free Corned Beef, so I went with a wonderful grass-fed beef Polish Sausage. Mmmmm.

Oh yeah! I make that in the crock pot with corned beef. I figure a few nitrates every now and then won't kill me any faster than anything else.
