Coronation Egg Salad

This egg salad makes for a tasty, high protein sandwich filling. Serve between two slices of wholemeal or wholegrain bread with lettuce leaves or watercress for a well balanced meal.

Directions

  1. Peel the boiled eggs once cooled, and mash up in a bowl with a fork. Finely chop the celery stalk and parsley.
  2. Combine all of the ingredients in the bowl with the mashed egg and stir to combine. Season with salt and pepper to taste
  3. Serve between two slices of bread of your choice.
