Easy, healthy, quick egg muffins. Great for healthy breakfasts all week.
Ingredients
Directions
- Crack eggs into large bowl and beat. Set aside.
- Cook sausage until done.
- Shred sweet potato into "hash browns" and saute with spinach.
- Add cooked sausage, sweet potato, spinach, salt and pepper to bowl with beaten eggs and mix well.
- Scoop mixture into greased muffin pan filling cups 3/4 full. Cook until eggs are completely done, approximately 20 minutes.
