Vegetarian Yellow Curry

Substitute any veggies into this easy and tasty curry recipe.

Ingredients

Directions

  1. In a saucepan over medium heat, melt butter with olive oil.
  2. Add onions and green peppers and saute until translucent.
  3. Add garlic and cook for about minute, until it becomes fragrant. Add carrots, potatoes and chilies. Saute for 4-5 minutes.
  4. Add stock and stir in tomato paste until dissolved. Add coconut milk and bring to a simmer.
  5. Stir in curry powder, salt, pepper, paprika and cumin. Add a squeeze of lime. Reduce heat to low and simmer for about 35-45 minutes until potatoes are tender.
  6. Enjoy alone or served over rice with naan bread.

I'll make this, and make some changes: substitute coconut oil or avocado oil [they don't burn, and smell good too] for the butter, vegetable stock for the chicken stock, microwave the potatoes and carrots to mostly done so as to greatly reduce the cooking time, and loss of nutrients. I may also add some beans: green or canned for the fiber and protein. Sounds very good as is though. :)

Yes, this looks like a good recipe, and I agree that vegetarian stock should be used to truly be a vegetarian dish. Also, a low sodium stock would be good for me, as I really need to cut back on my salt intake. I will add it to my cookbook.

It's not vegetarian if you use chicken stock, most vegetarians would be very upset if you served this to them. Best use vegetable stock.
