Happy Wednesday after a holiday, buddies...LOL! I've been busy with home projects, but staying with OMAD and keeping fairly low on carbs. I have found that I get hungrier when I go over 20, so it's a fine balancing act between staying completely keto, and losing my appetite, and upping the carbs without losing ketosis so I still get hungry. I've noticed, too that if I do indulge in a starchy carb, the carb cravings come on with a vengeance, and last for about 3 days.
Even while my weight stays the same, my body is still changing. I pulled out a pair of slacks this morning, which when I wore them a couple of weeks ago, were comfortably snug at the waist. They were loose when I put them on today, so much so that they kept sliding down my hips! I was actually able to pull them off without undoing the button and zipper. Another pair for the charity heap.
The tomato chips came out really good! I kept them plain, so if I want to I can grind them into powder. If you have never cooked with tomato powder, you're missing out! All the flavor of fresh tomatoes, without having to cook them down. I powder a lot of my dehydrated veggies. Just grind them up in a coffee grinder and store in a cool dry place.
A few months ago, I discovered something called "jowl bacon', made from smoked pig cheeks. Nice and fatty, the way I like my bacon, and very tender meat. When I went to get some more, they had none. But, at another store, I found chunks of it, in 1-2 pound chunks. No problem! I happen to own not one, but 2 electric meat slicers. The smaller one is good for prepping veggies for the dehydrator, but the big one is awesome for meats. It's so much less expensive to buy bulk lunch meats!
It took me less than 10 minutes to slice up 5 lbs of wonderful bacon.
Enough rambling, I think.
Have a great night!

If you want to up your carbs without adding very starchy carbs, would adding more veggies help? Congrats on your clothes becoming too big!

Haven't had Joel bacon since I was a kid....Good stuff. Thanks for jogging my memory. Loose clothes, how utterly delightful. Good for you.

I would never have thought of grinding tomatoes into a powder. I can see it being used in nearly every broth or gravy, though. How long will it last in the fridge, or do you freeze it?

@Carmen, I've been uninspired for making videos lately. But I have some white quail eggs that I need to use, so I may make one this weekend.

@Doobrie, yes, that's an effective strategy. Unfortunately, all of the veggies I really like are starchy...like corn, peas, carrots, potatoes, etc. I'm less fond of leafy greens, except artichokes, and they're devilishly expensive right now.

LOL, @Gwen! I hear ya on the auto correct! Poor Google keeps getting new words added to the dictionary daily. Funny thing about pants getting loose...they also get long! I find myself stepping on the hems of all my pants lately. :/

@Nanette, the beauty of dehydrated foods is that they're shelf-stable for years. I vacuum seal the jars I store them in, and they'll stay fresh indefinitely in my pantry. I'm using stuff today that I dehydrated 5 years ago. I love my FoodSaver!
