I haven't recorded a weight this week because it's bounced around the same number all week, up a little, down a little, but only in fractions. Not bad, considering I've been a little more liberal with the carbs. Things are still changing, though, because I've had more people comment on how "*really* skinny" I'm looking this week, than ever before. I've still kept to eating once a day, as it seems to be a natural rhythm for my body.
I have an unexpected day off today, so it's a 3-day weekend for me. Woohoo! I'm thinking what my next cooking video will be....any suggestions? I'm thinking a main dish/entree, since the last 2 were appetizer and dessert.

Saw your tip (combine LCHF with IF) and I've been going that direction but probably need to increase the fasting time. Thank you for posting it - it's always nice to see someone else thinking (and doing) along the same lines. Are you making cooking videos?

My weigh has been up and down all week too! I only recorded a 0.3 loss, maybe I should have waited for a more substantial loss. Being told you look skinny, well i am not sure about that term, but slim is nice! Enjoy your weekend Kes 🙂

Make a curry dish! Yummy coconut milk and spices with just about any meat will do! Have a great day! Red curry with beef or green curry with shrimp or chicken and green pepper...baby corn if your diet allows...FUN!

Curry does sound good, Iulani, but I have yet to find a good substitute for rice. Cauliflower 'rice' just doesn't cut it for me, and the shiratake 'rice' reminds me of tapioca balls. And call me a traditionalist, but curry without rice just ain't right! LOL!

I tried the Shiratake spaghetti and it reminded me of night crawlers. The mushrooms have an earthy aroma to them and I just couldn't eat more than one bite without thinking "this is how night crawlers smell."

@Diehard, I finally learned how to get the shiratake noodles NOT to feel/taste like nightcrawlers. You have to rinse and rinse them under running water, dry them on paper towels, then put them in a dry skillet, over medium heat, until they turn opaque. It changes the texture to more like 'real' pasta, and takes away that earthy taste. Oh, and I think you might be confusing 'shiratake' with 'shiitake'. Shiratake is made from a mountain yam, while shiitake is the mushroom.
