It's been a busy week so far. Work is packed, feeling better, but still a little congested. Today, I had planned on making another video for my Little Cooking series, but my neighbor asked me to help her take her 3 dogs to the vet for shots. It was right in the middle of the day, and 2 of the dogs get very aggressive with the vet, so it ate up a good portion of the afternoon. On the way home, I stopped at the local fishmonger. They had beautiful big shrimp, so I got a half pound. After feeding the kitties, I searched for shrimp recipes, and found "Bang-bang shrimp". I keto-fied it by leaving out the flour and cornmeal, but making a 'breading' of egg and cornstarch. OMG! Why have I never eaten this before?? I think the sauce makes the dish. I could probably just saute shrimp in butter, coat them with the sauce, and it would be just as good. I've been stable on weight, because I've been eating breads and a few starches. Still very low carb (under 50g a day) but wheat is what it is. I may have developed celiac from being off wheat for so long, but it seems every time I eat wheat, I get cramps and diarrhea. Still, the 23:1 IF seems to be keeping me stable. I found a video today that is a gift from the Gods.
