Thanks to everyone who commented on my last journal entry!Your encouragement has been priceless.
I've really had to fight with myself to stay strict with under 20 carbs/day...but I have fought the demons for 3 days, and their grip seems to be loosening a bit. The hardest is at work, either because people bring food in (usually ultra-carby), or if I have time for lunch, the options close by are fast food. But I've managed to find my way back to equilibrium, using the same tactics that have gotten me this far. If I felt like I was caving, all I had to do was shake my leg and feel the water sloshing around in my ankles!
So, yeah, after 3 good days of 'being good', I had a little whoosh today. And now that the carb demon's grip is loosening, I'm going to power through these last 10.
I found a good low-carb cookbook at a thrift store for 50 cents, so I'm hoping to get some inspiration for new meals. Scanning through the book, I see that a lot of recipes use soy flour, so I'm a little skeptical. At least until I can research it a little more.

You're doing so well! Good for you. One of my favorite things to do for a fast dinner is something I learned from seeing Richard Simmons on General Hospital all the way back in 1980, when he was pretty much a minor character. He was teaching exercise classes on the show, as himself, and dismissed the ladies one day with a '9 minute dinner' which I have been making often ever since. Take a steamer basket that fits down into a saucepan. Fill the saucepan with enough water to bring to a boil but not wash into the basket. I usually season the water, with a bit of garlic, onion (even the skins will do!) peppercorns and fresh ginger. Put one or two portions of boneless skinless chicken in the bottom of the basket, then cover it with the fresh (in our case low carb) veggies of your choice. I usually put the hardest vegies on the bottom, like carrots and broccoli, and then added slivered red peppers, sweet onion, and sometimes finely sliced cabbage. When the water begins to steam cover the pan and steam for 9 minutes. The vegetable juices cook down into the chicken so it isn't dry and/or flavorless. I usually eat this with a little (as in 1/2 cup or less) brown rice, and season it with a splash of soy sauce for a reasonable facsimile of Chinese food. I cook two pieces of chicken but only eat one for the dinner, and then chop the other one to have on a salad for lunch the next day. If you try this, I hope you'll like it as much as I have!
