Picking it back up. I am excited about my meals this week - finally found the spice that my son loves so our vegetarian healthy food expedition is well underway!
I will try to take pictures at my meals times. I prepped: veggie stir fry with wheat noodles, Greek chickpea salad, Greek roasted eggplant, and stuffed sweet potato. I learned how to cook my own black beans - and that is how I learned the spice my son likes! Cumin - who knew!? I wasn't the biggest fan of it in the beans but it was good. My hubby liked it too! So tonight my son gets quinoa with black beans as a "try" food.
