FBS 143. Ok, I could not wait for my dark rye/whole wheat dough to get through its first rise. This is an experiment using good flour with some quality diastatic malt powder as conditioner. This doesn't pretend to be gluten free but it is made with my sourdough starter so gluten is chemically 'altered' some and makes it less likely to bother me. I took a bit and shaped it into a flat round about 3" in diameter and pan-toasted/cooked it. To log it, I had to use the closest item from the list. Yup, went over my goal by 33 calories but I'm ok with that. It was my grain for the day. Not sorry. ;-)
