I had a great, lazy weekend. My weekends are Sun-Mon, so today is back to work day for me.
Yesterday, I decided to experiment in the kitchen. I'd been seeing all kinds of rave reviews about Fat Head pizza, but was skeptical about it, as a lot of other low-carb, highly rated substitutes have been a major disappointment. Cauliflower rice is nothing like rice, roast radishes do not fool the mouth into thinking it's potatoes, and 'cloud bread' is just an eggy souffle.
But Fat Head pizza...oh glorious day! A big yes on all fronts. The crust certainly won't fool you into thinking you're eating a 'real', yeasty, crunchy, doughy crust, but as a vehicle for toppings, it's great, and the extra cheese flavor only adds to the enjoyment. I only had 2 small squares of it, because what I really wanted was a shrimp cocktail. I had gotten a half pound of big shrimp on Saturday, and they were calling my name. But when I went to make the cocktail sauce, I discovered that I was out of horseradish. I remembered, though, that I had a tube of prepared wasabi, so I substituted that. I didn't taste it before adding it to the 1-carb ketchup, and added a good dollop. YIKES! Unlike the powdered wasabi I've used, this stuff packs a wallop! Not only did the first bite clear my sinuses right out, but it has some real heat in the mouth and throat. My eyes watered like crazy! It tasted really good, but of the 2 Tbs. of sauce that I made, I ended up only eating maybe 1/2 tsp for 11 shrimp. Wowza!
I'm off to hit the shower and get to work. My Thai client that always brings me exotic goodies is coming in, so I'm looking forward to it. I made Lox last week, and saved a good portion of it to give to her.

Never heard of fat head pizza I'll look for it .......have been thinking about pizza lately.......... Have a great day at work...translates into make a lot of money.........

There are several versions of low carb pizza. Fat Head pizza uses some almond flour and has a more crust like consistency and taste. Other pizzas do not use any flour and is simply eggs and cheese. If you do a Google search on either fat head pizza or low carb pizza, you'll find a lot of recipes.

Roasted radishes are good, but potatoes...Not so much! I shall have to try Fat Head Pizza. Thanks for the tip.

Thanks everyone! Happy Valentine's day. Or, as we Pagans say, Happy Lupercalia! It's good to feel like cooking and eating again.

Lupercalia...a very dark Roman festival...sacrifices and whippings...LOL, I think I prefer the current manifestation of the holiday

Not dark at all! The sacrifices were of animals, (which I joyously eat) and it was instead of dark, it was a tribute to fertility. With the coming of Spring, and the end of a hard and lean Winter, all things fertile were to be hoped for and celebrated. The 'whippings' were ceremonial and mock, and were believed to increase fertility and ease of delivery for pregnant women. Since the Christian church usurped most of the Pagan holidays, is it any wonder that a fertility rite was romanticized into a tradition of romantic love?
