A busy day at work today, and a cool discovery!
The boss brought in a crock pot of soup for us all. She feeds the crew on a frequent basis, which on busy days is a real godsend. A lot of the time, it's pizza or pancake breakfasts from Cracker Barrel, which I refrain from...but the soup was homemade, and she told me several times that it was "the healthy beans". I did try some, and it was delicious. Thinking about how to record it here, I caught her at a moment when we both had some down time, and asked about the ingredients.
She told me about something I hadn't heard of: Birdseye frozen protein vegetable blends!
The soup was tomato based, with broccoli, spinach, lentils and white beans...and delicious!
I googled it, and apparently, there are several varieties. The one she used is the Italian blend. There are several others which I will be investigating soon, depending on how this body reacts to the 1/2 cup of the soup I had.

For my vegetarian and vegan buddies, this is an indication that the food industry is listening. YAY!
The nap didn't happen, so it looks like I'll be crashing early again tonight. I have the day off tomorrow, so I can catch up then.

That sounds lovely but I don't think Birds Eye have cottoned on here in the UK. It's a shame as although I usually make my soups from scratch, it's nice to have something in the freezer for emergencies and time-poor evenings.

Just an FYI on these blends. I did some reading up on them, and they all have sauces. Some of the sauces have wheat and/or sugar in them. If they're like some other Birdseye sauced veggies, you should be able to pick out the sauce cubes when they're still frozen.
