Heading back down the scales. Nice.
So, I've been looking into the soy flour thing. It's almost double the carbs of almond flour, but 1/3 of wheat flour. Most of the recipes in my new cookbook, that have soy flour as part of the recipe, claim to come in right around 8 g of carbs per serving. Totally within macros.
I probably wouldn't bake with the soy flour, because of the higher carbs, but to use in breadings or as a thickener, it might be alright.
My other issue with soy is that a great majority of it, in the US at least, is GMO. I'm very skeptical about GMOs in general.
I was talking to a friend yesterday who had been having some health issues, i.e. a persistent bladder infection and a wound on a knuckle that wouldn't heal. Around the time both issues started, she had been on a 'chocolate binge', as she put it.
She is a landscape architect and pretty much eats very clean, growing most of the food her family consumes. She has avoided soy for many years, precisely because of the GMO factor. Anyway, she finally linked the chocolate binge with the timing of the health problems, and discovered that the kind of chocolate she was eating contains soy lecithin and soy protein isolates.
Long story short, she quit eating that brand, and both issues cleared within a couple of days. Things that make you go, "Hmmmmmmm..."
I'm dog-sitting for my neighbors this weekend, so I've been walking a lot more. It's a good thing. :)

Happy Friday Friends and Followers!
My coworker that was out with pancreatitis and gall stones returned to work today. She underwent surgery for the stones, and is feeling tired, but much better. Her prognosis is very good, and there was no cancer found. She also dropped a good bit of weight! We had a 'Welcome Back' party for her, and of course there was a lot of food. I ate the egg salad and tuna salad out of the slider sandwiches, and tossed the buns in the bin. My sloshy ankles made tossing them easy! Our receptionist is famous for her deviled eggs, and I had 3 halves. They are SO good! One strawberry and a 3 cm square of gouda cheese rounded out my lunch. Now my dilemma is that I have no appetite nor hunger, but need an additional 45-50 grams of protein to make up my macros. UGH. I might run up to the grocery store later and pick up a rotisserie chicken to graze on.
It looks like I'll be dog-sitting this weekend. My neighbors are taking their ATVs out for the weekend. It's a strange pack: a black Lab, a Rottweiler, and a Dachshund. They are funny. The female Rottie wants to be the Alpha, but the male Dacshund is the real Alpha.
Work is getting busy for the holidays. It's a very good thing, since my property taxes are due next month.
Anyway, lest this become a random ramble, I'll sign off.

Thanks to everyone who commented on my last journal entry!Your encouragement has been priceless.
I've really had to fight with myself to stay strict with under 20 carbs/day...but I have fought the demons for 3 days, and their grip seems to be loosening a bit. The hardest is at work, either because people bring food in (usually ultra-carby), or if I have time for lunch, the options close by are fast food. But I've managed to find my way back to equilibrium, using the same tactics that have gotten me this far. If I felt like I was caving, all I had to do was shake my leg and feel the water sloshing around in my ankles!
So, yeah, after 3 good days of 'being good', I had a little whoosh today. And now that the carb demon's grip is loosening, I'm going to power through these last 10.
I found a good low-carb cookbook at a thrift store for 50 cents, so I'm hoping to get some inspiration for new meals. Scanning through the book, I see that a lot of recipes use soy flour, so I'm a little skeptical. At least until I can research it a little more.

Still working out what maintenance will be like...
*sigh* English muffins and spaghetti in the same week=swollen ankles and water weight. Not worried about it, just danged mad that, repeat after me, "Kes can NOT eat wheat!!!!"

It's been a busy week, not much going on, not recording as I figure out what's going to be 'allowed' on my new lifestyle.
So, this week, and until I reach the goal, are going to be pretty strict Keto and OMAD. I guess flirting with maintenance before getting to goal is a little foolish. But, hey, it's like the rest of my life, right? I still want to try baking with the Mediterranean wheat I found online, but I'll wait until I see that 'magic' number on the scales. Dinner tonight is a grilled chicken thigh and a cold asparagus salad.
The weather in Coastal Carolina has been chilly the last few days, but we're warming back up now. After nearly 17 years here, my blood has thinned, and I really feel the chill in the air. On the plus side, however, is that I'm MUCH more able to tolerate the long, muggy summers.
We had fun at work with Halloween today. Almost everyone pulled out their finest themed garments, so we were a colorful bunch! I have a pair of scrub pants with stylized skulls on them, and a black t-shirt with a witch on a broom with the caption, "Wicked!". The pants were VERY baggy, but I kept them up with the drawstring.
It was time to upgrade my phone, so I ordered the next generation of my old one. It's taken me 2 days to get it activated and figure out how to transfer all my data. I'm techie compared to many folks my age, but I'm still far from your average 6 year-old. But I finally managed to save all my contacts and content, and get it transferred to the new phone. I was shuddering at having to manually enter all my contact info, since it's both my personal phone and my work phone.

I had a major "Aha" moment today. I've mentioned before about hair loss, and speculated that it was because I wasn't paying attention to protein macros.
But today, I was reflecting.
20 years ago, my mother was undergoing chemo and radiation therapy for liver and lung cancer. It was decimating everything that she was. As a hairdresser, the weirdest thing I've ever done was to shave my mother's head when her hair was falling out.
My mother and I were always at odds because we were so much alike. She wanted to relive her potential through me, but I just wouldn't cooperate. LOL!
But we were SO much alike, and today, I realized that I'm now the age my mother was when I shaved her head because of the hair loss from chemo/radiation.
So, with the belief that thoughts, even sub- or un-conscious thoughts, create the reality you live...am I reflecting or reliving my mother's life/death? My hair is growing back, and the Pixie style that's emerging from the regrowth is actually kinda cute. But the deeper message that's emerging is that *I* have the power to choose to live or die because of *my* choices and decisions, and not because of heredity.
Today, and forever more, I choose a diet that gives me health. I don't know what the future holds for me, but I do know that my future extends long past the 62 years that my mother lived.
Tomorrow, I will get up, go to work, and do my best to enrich a few people's lives by making them feel better about themselves. And I will heal the competition/karma between my mother and myself and my hair loss because of her struggle with chemo/radiation.
Awareness is all, folks.
