A versatile vegetable spread that can be a side dish or a tasty snack.

Directions
- Clean and wash vegetables. Process zucchini and peppers using mincer into a pot. Add tomato paste, oil, salt and chilli. Mix everything thoroughly.
- Put the pot on the stove, bring it to the boil and simmer for 30 minutes stirring vegetables frequently (to avoid burning and sticking).
- Add minced garlic to the pot, mix it well and simmer for another 10 minutes.
- You can eat it hot, warm or cold. As a side dish or a spread. Sprinkle it with fresh herbs of your choice.
- Suggestions: if you don't have mincer, do not use blender as it will spoil the taste and texture. Better to chop it finely. If chopped coarsely it will be difficult to spread, but will be a nice side dish; you can store it for a long period if you add teaspoon of white vinegar at the end of cooking.
