- Top and tail the butternut, cut it in half and scoop out the pips.
- Cut each half lengthways into 3 wedges, rub with olive oil season with spices and salt.
- Place wedges on a baking tray and roast in the oven at 180°C until golden and soft.
- Serve as a side dish, or torn into salad or frittata.
