- Empty a drained can of mixed bean salad into a bowl.
- Toss with chopped lettuce, tomatoes, peppers, red onion and fresh parsley.
- Add the chicken breast slices.
- Squeeze over lime juice.
- Note: try swapping parsley for coriander and hot and spicy chicken for BBQ chicken.
